First of all – WHAT ARE CALÇOTS (KAL-SOTS)?
Well, they are a great excuse to gather friends, family and neighbours for a winter barbecue fiesta known as a colçotada – Calçots are sweet, tender, giant green onions looking like small leeks which come into season throughout the winter months. They reach peak flavour between January and March so now is the perfect time to enjoy them. Grilled over open flames and served with spicy, nutty romesco sauce and normally eaten wearing a bib, they are a gourmet treat and a fun way to enjoy something different.

The onions are tightly packed on the barbecue and roasted until the outer leaves are completely blackened and charred. They are then wrapped in newspaper to steam until tender.
Then it starts to get messy – Once unwrapped the burnt outer leaves are peeled back to reveal the sweet tender flesh – dipped in romesco sauce and consumed with gusto.
Romesco sauce is another gem of Catalan cuisine – which is utterly delicious when paired with grilled seafood, vegetables or light meats.
The Perfect Recipe For Romesco Sauce
Heres what you’ll need:
- 3-5 deseeded dried ñora peppers (soaked in boiling water to rehydrate)
- 3 large tomatoes quartered
- 6 large cloves garlic
- 150g almonds or hazelnuts
- 1-2 tsp Smoked paprika
- 1 slice day old country bread cut into chunks
- 2 tablespoons Sherry vinegar
- olive oil
- Salt
- A little water
How to make your sauce:
Start by frying the bread until browned, set aside.
Then fry the tomatoes on a medium heat, add the garlic followed by the nuts.
Once everything has taken on some colour you can add a little water to keep everything moist.
Add the vinegar, ñora peppers and smoked paprika and simmer until all of the veg is soft. Add in the fried bread.
Remove from the heat and allow to cool until you can blitz it all together.
You may need to add a little more water to help the blades turn. Add salt and more oil and vinegar to taste. Best served warm.
